Chef Geovanni Euceda runs Horseless Carriage, a full-blown restaurant on the site of Galpin Ford in North Hills, Calif. The former chef at the swank Beverly Hills Hotel was lured to the dealership eatery by Galpin’s legendary owner, Bert Boeckmann.
